I like GNU ("GNU's not Unix").
Here's some nerdy humor on the recursiveness of it: http://www.gnu.org/fun/jokes/gnu-overflow.html

There's also a piece of software called YACC which stands for Yet Another Compiler Compiler

At a place I once worked, folks often used to refer to stuff that wasn't working as Tango Uniform (Titties Up), but I thought that wasn't descriptive enough for some of the things that went wrong. So I created BUS (Buns Up Squealing), kinda a "Deliverance" reference. It really caught on.

My favorite acronym story was when our boss was having a meeting with his boss, and didn't know what an acronym was that was in so many of our activity reports for the test stands. "What does M/T stand for?" he asked. I tried my best not to giggle as I explained, "Ah, that means empty, sir. It is what it sounds like, the test stand was empty."

What is now called "The University of Northumbria" was originally going to be called "Central University of Newcastle-upon-Tyne".... It wasn't until they had all the official paper, signposts, etc, printed up until they realised their massive error!
