This whole thing is pretty [censored] up. You're saying everyone in your industry is so unprofessional that they tell each other who's shopping for jobs? Resumes are generally sent with the understanding that it is confidential. I'd be pretty pissed at someone at your new place of employment for leaking this.
With that said, you just have to tell him you're leaving. Tell him it';s been nice working there and you've enjoyed the people, learned a lot or whatever.
