I'm interested in the bet described - shirt on back from 0$-1k in 7 days but in LA.

How about a poker related bet?

Start with X$ at a Los Angeles Casino (hotel included) and you have to get it up to a certain amount of money in a certain amount of time. If you bust you fail.

You have up to 1 month and you must provide valid proof.
Freshwater only.

The fish bet is way too vague... you could just name some extinct freshwater fish from when the dinosaurs roamed the earth and obviously win this bet.

I think the species of fish needs to be laid out before the bet goes down.

If you really want the fish to not be named explicitly beforehand, perhaps some more general restrictions like requiring they be legal game fish, must be present in non-trivial quanities withing a single state, etc, etc.

Would still be plenty of trickery and gamesmanship possible, but would rule out some of the crazier stuff like asking for some 1/2" long tropical fish that only lives in some isolated region of a 3rd world country.
