Just go get something pre cooked from somewhere that you can play off that you cooked, and then stick it in the oven. Pour some wine and stick some lit candles on the table. If you really wanna be authentic, wet some cooking dishes down and stick them in the drainer so it looks like you used them, and leave a knife on the counter. Then when she gets over tell her dinner is in the oven and it will be ready in about 15 mins. That should give her just enough time to blow you, and then wash out her palate with some of the that wine you poured, before dinner.

Homemade macaroni and cheese. I recommend the following version with a couple slight alterations:

My notes:
When adding the milk to the roux do so gradually and stir lots. You want this to be well mixed, otherwise your sauce can become clumpy.

Don't rinse the pasta with cold water - this is unnecessary and rinses off the small amount of glutinous water that sticks to the pasta and gives good sauce cohesion. Minor, but time saving.

Add some nutmeg when adding the paprika and salt and pepper. Not so much that its flavour becomes overt, but just so that it emboldens the other flavours in the sauce.

I got the impression from the original post that he's not much of a cook. A roux isn't impossible to get right on the first attempt, but it's not the easiest thing in the world, either, as the timing is pretty delicate. I wouldn't recommend this unless he's willing to fail once or twice.

The same could be said for pan-searing steak, which someone else suggested, in my opinion. It's a relatively simple thing to do for someone with a bit of experience in the kitchen, but again, the timing is delicate. And the consequences of messing it up are much more severe than if you mess up the roux for the mac and cheese.

Of course, I could have misunderstood OP, which would make all of what I just said irrelevant. And I do think that he should, at some point, learn to do these things, but if he is hoping for something nearly foolproof, I'm not sure these suggestions are the best.

The one meal basically me and all my buddies made in college for girls was fettucine alfredo. We used a store-bought sauce (we did eventually graduate into making our own sauce, which was a relatively eventful -- but successful -- adventure), and we'd just cut up chicken breasts, broccoli and/or red and yellow bell peppers. Sauteed the chicken in garlic and olive oil, steam or saute the veggies, toss it in with the drained pasta and mix it with the sauce. Really easy and everyone we served it to seemed to be impressed.

On aluminum foil or parchment paper...

Place long salmon filet in center.
Season with salt and black pepper.
Layer slices of lemon on top.
Place dabs of butter on top.
Curl up the edges so you almost cover the fish.
Put some soy sauce in.

Bake in oven at 350 for 20 minutes. Check on it then, depending on how you like your salmon.

Serve over rice, and a side salad.
