I have a pair of tongs, maybe 6" long, that I can't find anywhere else for the life of me. They're all stainless, and the "catch" or whatever that locks them into being close is a little slidy thing at the top that can slide open or closed just by turning the tongs point down or point up. In other words, if I'm cooking and want the tongs to stay closed, I just point the tongs up, towards the ceiling, and the slidy thing slides out and they lock.

I've been to tons of stores, including three restaurant supply stores, and can't find another pair of tongs like this. The closest I've gotten are tongs with a lock that you have to physically pull out or push in. Any help?

Try a grocery store. I have a pair like that - they're cheap and flimsy and aluminum, and I love them. I think I got them at Safeway or something for $4.

Yes they do. I have had an 8" Forschner chefs knife for a couple of years. They really hold an edge for a long time.
They handle really well. I like everything about it.
These are the people that make the swiss army knives.

don't get a chefs blowtorch, a normal one does a better job
