I think the confusion stems from holdem, where the best possible made hand is always favored to win.

In general when people talk of the nuts, they're referring to the current hand without taking equity into account.

For example, A2KK on a 678 board is the nut low, even though A23T on a 678 board is more likely to win low by the river. So by your definition, only A234 on a 678 board would be the nut low. I don't think anyone would agree with this.
