I'm pretty sure the talk that Sammy is a top Omaha player is gamemanship on the part of the other players done in order in order Sammy in the game.

How does that not make sense? Sammy's probably been playing long enough to realise which games he's a fish in, so he's likely not going to gamble if they're not going to play a lot of games where he has an edge.

To quote Doyle, "You have to give action to get action". My guess is that Doyle thinks his edge over Sammy in games other than Omaha is as great or greater than Sammy's edge in Omaha. They have to play the fish, er Sammy, in PL Omaha to get him to gamble with them in NL Holdem and other games where he's hopeless.
