However, if I check, he will usually bet those 1-pair hands for value because it looks like I don't have anything. I then shove and get more value when they call.

I like it, but I'm not sure about the river shove, won't he be able to get away from anything less than 2 pair on the river?

I think turn check is a pretty big mistake, but no one wants to talk about it.

I think its a more important decision than river

FWIW I think the turn is fine, but betting is also fine. Maybe a 40/60 ratio or something. I'd come close to balancing them. As played I think the river is very very standard to the point that you're losing significant value by leading.

fps

bet turn

bet river as played.

first level players fold one pair to river c/r dude. That is kinda the point of the river c/r play (getting massive value from second best nut hands / making strong-ish one and two pair hands fold).

I don't think the turn is fine.

In fact I think it is a mistake to not bet the turn and I don't think you should balance it any amount...

maybe we have to agree to disagree, but I think its a pretty significant difference between checking and betting

You're the better player so your line of thinking is likely better than mine, especially in 3bet pots since you play a lot more of them coming from 6max.
