i havent had them in a long time. but my favorite was cutting a whole one thinly on homemade pasta noodles cooked al dente and covered with a little butter and some pecarino romano cheeze
with a bottle of ruffino chianti

My meal tonight was with a full bodied Sangiovesi (forgot the bottle details unfortunately). I prefer truffles with very rich meals, for example my last meal was thick black truffle chips served on top of a rabbit tortaloni (what is a tortaloni anyway?) but I'd love it equally with a bolonaise sauce w/ home made ravioli.

there is much better ruffino than the 10 buck stuff. but ruffino was the wine i grew up with so you get a taste for something. and when eating a hearty meal some wines like chianti do very well with food.

im very confussed. i thought truffle's were a type of chocolate covered candy with various fillings not some weird mold that may or may not have pig [censored] on it.

am I the only one, who has never even heard of these things?

ruffino is a totally drinkable chianti but, come on ray zee, not very baller. what is it like 11 bucks?

i had some sort of venison dish involving truffles a while back but was disappointed by it because it was waaay overcooked... TT, you should recommend a place and i will go and post a trip report. i promise to drink a more baller wine than ray zee.

Fiama on Price street is where I went, there is also a Fiama at the MGM Grand in Vegas (not sure if they have truffles on the menu). Diner for two was $300 and change, and we only had one course and one glass of vino each. The cost is from adding the truffles at $75/serving. Another great option is Da Silvano on 6th Avenue, but you first have to get a table (very hard, its a minor-celeb hangout) and order from the menu with no prices (a very dangerous thing even for a balla!).

I want a full trip report NT!

She had the duck with white truffle chips, and I had the oxtail tortellini with cream and wine reduction sauce slathered with white truffle shavings.

TT - omg you so got the better meal I hope you let her try some, [img]/images/graemlins/heart.gif[/img] oxtail.

Actually, I remember pretty clearly the first time I had truffles - it was a truffle omelette. Really good.

I actually sometimes cook with truffle oil and truffles, really random if I do though - I make a simple risotto with chives and truffle oil, just incorporate truffles (I like the Oregon whites) late in the cooking.

I don't like caviar... I keep trying, and each time I want to hurl. But I do eat foie gras now (which is now illegal in Chicago I hear) so I'm sure some day I'll discover how wonderful caviar really is.

oooooooohhhh that sounds wonderful, do you have a recipe for the risotto? I don't cook, but that sounds simple enough for me to try. I have some truffle oil buried in my closet, I want to give it a try.

yes, she loved the oxtail. I think it opened the door for future meals together
