"Anybody know how to crop a whole color out of a picture?"

there are a bunch of ways to do this kind of thing...duplicate the layer and make a selection for the color you want (use the lasso or quickmask depends on shape) then desaturate the layer (i suppose by crop a color you mean to desaturate it) and use the same color mask to mask the layer visibility, boom...

if you mean a color key like a greenscreen then you can do the same thing...or you can use the color range tool which doesn't have many settings but works ok...
