I don't really know anything about this other than what I've seen in movies. I think she's supposed to throw it down the sewer grate and run off crying. The next man she meets will be wonderful.
On a more serious note, there's a lot of info on wikipedia including: Tradition generally holds that if the betrothal fails because the man pursues other women or himself breaks off the engagement, the woman is not obliged to return the ring. The ring only becomes the property of the woman when marriage occurs. my ex didn't cheat on me but when it ended I just told her to keep the ring because I didn't care to go sell it or have it hanging around. I bought it for $5k out of my bankroll, she pawned it last week for $800.
