I haven't played this guy but I think that if he is bluffing he will keep betting the river hoping you had a draw. If you are sure he is FOS then 3betting turn looks a lot better than calling. I'm not sure if you were were calling to rep hearts but i think thats -ev.
I also like a flop bet or turn check a lot better then betting turn.

You really need to check this turn if you're gonna check the flop.

Calling that turn c/r is just FPS. You're not repping set/air, you're repping a ton of hands.
