I always thought that cheese was implied in the term omelette and to order an omelette with cheese is one notch more respectable than ordering a quesadilla with cheese.

The correct filling for an omlette is anything and everything you have in the fridge.

Corned Beef and Cheese is uber gut tho. Add some Nando's Ketchup once served.

Cheddar ain't bad, but I'd personally exchange that for a semi-mature Gouda and put that in your abovementioned mix.

And once the green peppers are in, shouldn't we add a slice of onion, too, should we?

I'll even order my cheese sandwich with cheese. I'm not willing to take any risks (on missing out on) when it comes to cheese.

No? Omelet is one of the few dishes where I love to add onions (not too big on those in most other foods).

I'll typically fry them before adding them in. Wouldn't like them (half) raw in there. This way you won't carry the taste of onions around all day long.
