I completely freeze up trying to talk to make conversation on the phone...especially with people I don't know. If I call Saturday, we can make plans and I'll meet her face to face, something I'm much more comfortable with.

I, too, despise talking on the phone. A suggestion for you to consider - call her tonight. Say something along the lines of "I'm heading out with some friends in a couple minutes, but I wanted to set something up for tomorrow night. Let's do X" That way, you get her a day in advance, but you don't have to make conversation.
