Actually the pinnacle of french fry dining is Poutine and if you prefer a "healthier" alternative "Frites sauce" (ie poutine minus the delicious cheese curds)

As The Daver notes, good fries don't need any condiments. McDonald fries in the beef-fat days used to be this way.

did McDonalds change their french fry grease recently or something? how long ago was this?

a. The fries still have beef fat in them. Just cause there was a big story about it doesnt mean it went away. There was a huge story on coffee burns and we stil sell it.
b. The oil has been changed twice in the last 4 years. about 4 years ago it was changed to a lighter vegtable oil blend, aand then about 2 years ago to a trans-fat free blend in most markets.
c. The change in taste is almost all in your head,

I'm not talking about the recent trans-fat changes. I'm talking about going from frying them in oil consisting mostly of beef fat (pre-90's) to the use of non-animal oil to fry. This was late 80's or early 90s. There was definitely a noticeable difference during this transition. Which is around when I stopped enjoying McDonalds fries. I've eaten them on occasion since, and while they might've figured out a way to make the flavor similar to their beef-fat frying days, it's definitely not the same.

Any french fries made from fresh potatoes are much better than any made from frozen pre-cut potatoes.

Not if they aren't prepared properly. I'll take a hot,crisp, salty frozen fry over a soggy, cold, bland fresh-cut fry any day.

I'm confused, you're about as far away from Quebec as possible yet still remain in North America. Poutine?
