[ QUOTE ] Ingredients: 1 pound cooked black beans 8 cups of cooked white rice 2 medium onions 6 cloves of garlic 1/2 sweet red pepper (not hot) dash of Worcester sauce (or equivilent - We use local Salsa Inglaisa but you will have to come here to buy that) Instructions: Boil black beans in pressure cooker with 3 cloves of garlic and a hefty pinch of salt until cooked, use directions on the package of beans. Saute onion, garlic and sweet pepper till soft - Not brown. Add the rice and the beans and mix together. Season if needed, and add the Worcester sauce or better yet, the Salsa Inglaisa. [/ QUOTE ] Thats pretty close to how I make it, I cook it really hot at the end though, so it comes out a little closer to fried rice than the traditional recipe. I also use roughly equal amounts of rice and beans. |
