Here in Phoenix the regular fries were phased out some time ago at the Arby's that I go to. Curly fries is the only option.

Makes sense. I don't know what kind of weirdo would choose regular over curly anyway. Doesn't take away from my point that curly fries shouldn't be considered french fries, however.

This is true as long as they are fresh, sometimes after 9 pm they are barely even hot, and soggy.

As for sauce,

One day I brought back McD's to the office. No ketchup, so I mixed a thing of Arby's Horsey Sauce with a thing of Taco John's hot sauce. Un-freaking believable. Never had it since, but it was damn good.

In the US, the best I've had were at B. Frites in NYC, which is now closed, amazingly. I'm a big fan of Les Halles in NYC. I've only been to the Park Ave restaurant so I have no idea how the other locations compare. Crispy, salty exterior filled with hot, almost cottony potato goodness inside. No ketchup necessary.

As The Daver notes, good fries don't need any condiments. McDonald fries in the beef-fat days used to be this way.

McDonald's fries were the best until sometime in the late 80s or early 90s when they started using "healthier" oil.

Don't know if it's been mentioned yet, but I think McDonald's changed their oil a while back.

Tik,

I've mentioned that a few times, but I stand by a great fry can still be enhanced by malt vinegar. You could give me the greatest fries in the world, if I'm eating them with battered and fried cod, I'm putting malt vinegar on them.

did McDonalds change their french fry grease recently or something? how long ago was this?
