I just want to say that I love this thread. Also, my favorite omelette:

cheddar cheese
chicken apple sausage
smoked bacon
tomatoes (diced)
spinach (chopped)
sauteed mushrooms

also good: the hawaiian
cheese, pineapple, ham. spinach if desired.

I live in a very polish neighborhood where sauerkraut is believed to ward off scurvy, and is served with damn near every meal. I really like it with kielbasa though, which led to an experiment where I threw the kraut on my kielbasa omelette after everything was cooked. Yummy. Bonus: no scurvy yet!

bwhahaha i like the addition of the Dom.

a related question: how stuffed do you like your omelets? For me, the omelet in those pics looks to be too high a stuffing:egg ratio for me.

So, is there a standard number of eggs for an omelet? Or is it up to the cooks taste? I've seen a couple of different numbers here. Is there a "point of no return" where you can have too many eggs? I think the OP has a point. The middle class would miss mahogany alot. Pine and oak etc are so 90s.
