For example, for chopping garlic, it would seem you want a little 5" knife. Garlic is small, right? But a 10" knife is a lot easier to manage. |

Do you mean pots + pans? If so, you don't need much. One decent sized skillet (not teflon), one saucepan (1-2 qt) and one large pot for boiling water (pasta) is really all you absolutely need. Obviously, more items will give you more flexibility. If you are only going to spend on one item, get a better skillet (heavy). This is the most important one.

A dutch oven is a nice item, but it can be expensive and is hardly essential. You could sear in the skillet then braise in the big pot. I use my dutch oven maybe a dozen times a year. I use the skillet several times a week.
