You are going to really enjoy the Wusthof knife. I have a full set of J.A. Henckels and a 6" Wusthof Chef and the Wusthof holds its edge far better.

It is my understanding that there is a great deal of variation within even the brands. I know I am looking for forged and full tang, but I'm not very knowledgeable otherwise.

Generally, the higher carbon content in the steel, the stronger the steel. The knife will keep its edge longer. You will be pleased with the Wusthof.

Amp,

You probably know what you're looking for, but something I fall back on when trying to choose between good knives like Wusthof, Henckels, etc: you get what you pay for, and the more expensive the better. I bought a nice Wusthof chef's knife when I was in Germany in 2003 and its still probably my favorite kitchen item.

At the top of my list is a Wii (thanks, girlfriend!) and the Philips DVD player that was posted about on here a month or two ago. The rest of the list is books: Cormac McCarthy, Alex Garland.

EDIT: Oh, anybody have good, sorta generic suggestions for "stocking stuffer"-type gifts for the gf? I hate thinking of stocking stuffers.
