EDIT: I'm thinking with SamJJ here...yes, grilled cow is great, but easier to mess up. I've had bad steak fajitas once or twice. My friend goes to Texas a lot and brings back HEB marinated steak fajita meat that is awesome stuff. However, I think I have an emotional attachment to Chili's chicken mushroom jack fajitas. I said I have an emotional attachment to them (for some dumb reason.) Maybe it's the bacon....? The Garduno's lunch buffet has some awesome fajitas (objectively ten times better than Chili's) as do most of the usual Mexican restaurants around here. I also like to make my own with Sadie's salsa. I'm a beef guy through and though, but chicken is a better choice for fajitas. it's not as tough as beef, can take on the flavors of the fajita better, and is generally moister than the beef you get in fajitas.

While a good steak fajita is better than a chicken fajita, I too often get tough, grizzly pieces of steak which makes eating the fajita a chore. Chicken is safer, and since I can't know the quality of the meat beforehand, I chose chicken. By the way, try drizzling butter on the chicken fajita...wonderful. |

Steak and its not even close. If by "beef" you mean ground beef, then I would have to argue that it is no longer a fajita anyway and chicken wins by default.
