Going for the big payday? Large or Small Value against a fish.

This hand came up last night and it was what I was waiting for all day. There was a 60/15/.5 fish in my BB and we were both deepstacked. He isn't very aggressive and has more station tendencies than anything. I was raising pretty loose on the button because he was letting me manipulate the pot so I'm pretty sure I could afford to play any two cards. On the river I'm not sure what to bet. What are your opinions on these different sizes.

50-75 - Get value from all kinds of random hands he may be playing

75-125 - Get value from random hands like 99/TT

125-150 - The guy is really passive and I think he might be afraid with a 78/89 and not want to go broke, but can't fold the hand. This might also rope him in with some other overpair type hands.

150-200 - This is folding out most things expect other 8s. I'm not sure how likely he has an 8 is, but it might be worth it to get tons of value.

Open Shove for 315 - Can he actually fold an 8? I think I'd rather do this with a set (aka a boat with the 2x 8s) but I think it's an option.
