Default I know what he has, but am not sure of a good line to protect my hand

Villain is 30/23/3.6. I'm almost positive he has J10 here, so based on that - where do we go?

The easy answer is call flop and donk brick turn, but he is very capable of raising the turn with a big draw as well as a set, so if that is your line, what type of raises do you fold to/reraise?
