FWIW in my local casino (harrahs kc) not only will the dealer not tell you what the players stacks are he wont tell you whats in the pot either (unless its pot limit). However all the dealers are required to tell you to stack your high denom chips up front and they do enforce that rule when you get deep enough for it to matter... I believe it is more a thing that will change from room to room and even dealer to dealer but the overall consensus is in cash games you need to determine stack sizes yourself, you can certainly ask a player and alot of them will give you an approximate correct answer but outside of that your on your own.

Once i had a guy sitting right next to me ask me how much i had left after putting in a sizable bet and i didnt answer, he then asked the dealer who didnt answer, after that he got visibly upset and started leaning over and actually did touch the top of one stack of my chips in an effort to "finger count" the stacks i guess. I queitly pushed his arm back by the forearm and said "dont touch my chips!" while smiling and he smiled back. Everything was fine (he eventually folded once he realized i had him just covered) and went back to normal. I think it has to do more with the two parties involved and how they handle it together, all it takes is one person acting like an ahole and the $hit hits the fan b/c the other person doesnt want to loose face at the table.
