Default NL200 - Quick check, two hands against same villain

Ok, quick check in the middle of a session.. these two hands just happened against the same (unknown, first orbit) villain within the same orbit.

HAND #1
Full Tilt Poker - No Limit Hold'em Cash Game - $1/$2 Blinds - 6 Players - (LegoPoker HH Converter)

SB: $210.70
BB: $73.00
<u>UTG: $240.30</u>
MP: $204.50
<u>HERO (CO): $200.00</u>
BTN: $209.40

Preflop: HERO is dealt A[img]/images/graemlins/heart.gif[/img] K[img]/images/graemlins/heart.gif[/img] (6 Players)
<font color="red">UTG raises to $7.00</font>, MP folds, <font color="red">HERO raises to $25.00</font>, 3 folds, <font color="red">UTG raises to $75.00</font>

What's your line here against an unknown? I usually shove against someone who is likely to be playing back at me but I'm wondering in this case against an unknown. Does anyone fold or see a flop here and why?

HAND #2
Full Tilt Poker - No Limit Hold'em Cash Game - $1/$2 Blinds - 6 Players - (LegoPoker HH Converter)

SB: $202.50
<u>HERO (BB): $200.00</u>
UTG: $202.40
MP: $212.70
CO: $79.20
<u>BTN: $437.30</u>

Preflop: HERO is dealt 6[img]/images/graemlins/heart.gif[/img] 6[img]/images/graemlins/diamond.gif[/img] (6 Players)
3 folds, <font color="red">BTN raises to $7.00</font>, SB folds, HERO calls $5.00

Flop: ($15) Q[img]/images/graemlins/spade.gif[/img] 8[img]/images/graemlins/spade.gif[/img] 6[img]/images/graemlins/spade.gif[/img] (2 Players)
<font color="red">HERO bets $12.00</font>, BTN calls $12.00

Turn: ($39) T[img]/images/graemlins/heart.gif[/img] (2 Players)

I should bet here 100% of the time, right? Should I call a shove?
