It's just a personal pet peeve of my taste buds, I think, and it ranges all the way from Chipotle to a $30/plate restaurant. In general, the meat is the dominant flavor and texture in the dish, and if you mix meats, they can clash or the dish can lack a focal point. Obviously, you need to make an exception for stew-type dishes like jambalaya, which are supposed to have different flavors and textures. FWIW, I can see mixing steak and chicken at Chipotle as being just fine, since they do have somewhat similar textures, but mixing say steak and carnitas would be an utter disaster.
