On the flop I feel his range is any 7 that includes a connected or 1-2 gapper (67, T7) as well as A7, I don't think he calls from the blinds here with K7 but if he does it's basically the same here for us anyway and is only a good thing because it gives us a wider range for 7s he could have. Also he could obv have 55 and the boat or have rivered the boat with 79. I don't think he flat calls a bet then all in with 68 here on the flop especially if he feels you are weak since he would assume he can't expect you to be paying him off with too many hands to big bets on the river.. and if he can't bet big on the river he's not getting the odds he would need to call.

So, of the most likely range here, I think he plays each of them like this, the 7 and the boat. There are more combinations for the 7 that he could have here than the boat and since your hand looks like an over pair trying to get to a cheap showdown he would also be betting a 7 small on the river trying to get you to call with it. So with that range and getting over 3:1 on the river I think this looks like a definite call.
