Proper chips/blinds for a 3 hour tournament

In a few weeks I'm having a home tourney, 2 tables (20 players max).

Some company is coming out to put it on (dealers, tables, chips, etc.) I won it as a door prize at a casino night my company had put on.

There is a semi-strict time frame of 9:00 pm to 12:00 am (3 hours)

What would be good starting chip stacks / blinds in order to have the tournament probably end around 11:45'ish?

I was thinking giving everyone 10,000 in chips (nice round number) with starting blinds at 100/200
