Always thought it had a French origin, and thus spelled 'cheques'.

Table games use cheques, denominations printed.
Roulette games use chips, denominations variable.

If they have denominations on them they are cheques. If they do not have denominations on them they are chips. Roulette is the most common game where they use chips, but there are some others as well. There used to be a dice game called richochet (last seen at Fiesta henderson but know gone form there) that used chips, and I saw a sic bo table once where they used chips as well.
