I'm not as sure about this for the Stud Hi part, but for Stud/8 and Razz, most people play atrociously. They'll play too many hands on 3rd, but as you point out, that's not a huge error with large antes. The biggest mistake they make is peeling 4th when they brick. So you should avoid jacking the pot on 3rd, even with pretty strong hands, because you're only going to make their calls on 4th less wrong. Instead, look for opportunities to play slightly marginal hands against players you've identified as weak when you can come in cheaply on 3rd. Then if you are still strong on 4th, you can start charging them.
