A few hands against a LAG

You reload at Stars, and choose a table. You notice that there is one guy who is playing every hand, betting and raising nearly always. You do not see him fold postflop. You see him cap a turn HU against a pre flop raiser with the crap end of a gutshot. You see him cap the river against another opponent with 7 high. You post the big blind. In the first 20 hands...

I am posting these hands because I made a conscious decision during the first hand. Since he is not folding, a raise opens you up to an expensive reraise. You have no idea what he is holding, and I remembered something about c/cing in these situations. I am not exactly sure what the rationale is behind this, besides the basic win more when you are ahead bc he keeps donking, lose less when you are behind, but if he wil keep raising and not stop, then what are your standards for going to war? Are there spots where I should have popped it?
