I recognize there is a certain amount of risk. If I had huge amounts of money on the table I would remove the cash and high denomination chips when i left for dinner breaks. I would leave them on the table for piss breaks (since the table is safer than the bathroom where there are no cameras) but I would put cash under the chips to make it harder to steal. I generally don't worry about chips only cash because chips are hard to steal (especially stacks of low denomination chips).
