His pant leg is covering up something on his ankle when he starts, and it's presumably the knot. It looks like when he shakes, the pant leg comes up and reveals the knot, while he kicks the loose string away somewhere quickly. When the trick is over, you can see some sort of velcro strap around his ankle.

I'm guess that the shoelace was it already tied. He had his pants covering where the tied laces would be visible prior to flicking his foot around, so he could have simple left the loose ends long enough to make his shoe look untied, lifting his pants leg as he completed the trick.
