Signature Dish
I'm making a pilot for the Food Network called Signature Dish. It's going to feature restaurants and chefs all over the country (and Canada) that have a specialty dish that people drive for miles and stand in line for.
We're doing three for the first show: Rendezvous and their dry rub ribs, in Memphis. Roscoe's Chicken and Waffles in Los Angeles. And a more elegant place in Vegas that I haven't chosen yet. But I need more restaurants for the (hopefully) upcoming shows! So I come to 2+2 for the scoop. What are some of your favorite places to eat and their signature dish? It can be a five-star restaurant or a back roads diner with a short-order cook - all I ask is that they be known for a particular food item! Appetizer, main course, dessert, even a drink - all good! So give me: city, restaurant, and dish, and what makes it so good. |

Re: Signature Dish
The Angus Barn, Raleigh, North Carolina. The dish is steak; they're world famous for it. Also, the head chef was recently on Iron Chef and won; I don't know whether that's good or bad for your purposes. Their wine cellar is also world famous.
This is their 82 page wine list: http://www.angusbarn.com/pdf/wine_list.pdf |

The Angus Barn, Raleigh, North Carolina. [/ QUOTE ] Sorry for threadjack, but oh my holy god that place rules. I went down there with my parents and a couple of my friends and their parents senior year of high school to visit the NC colleges and we ended up going there for dinner. There were like 16 of us in the group so the only table big enough to handle us was the giant table with thrones around it in the wine cellar. Eight years later, still probably the best dining experience of my life. |

Re: Signature Dish
Dom,
Nice. Check the BBQ thread for some ideas. I'd go with brisket at Salt Lick BBQ outside of Austin. Dirty's in Houston, chicken fried steak. Do you think it would be more interesting to feature the greatest version around of something common (pizza, steak, fish, hamburger, etc) or focus more on some really unique dishes? Seems like the latter might be more appropriate for "signature dishes." I'll try and think up some like that. Gino's East in Chicago, sausage pizza. Deep dish Chicago pizza with a full layer disk of sausage. Yum. |

Re: Signature Dish
Dom,
Slanted Door in San Francisco. Best Vietnamese restaurant in city, one of the best anywhere, really. Either their Shaking Beef or Chicken Clay Pot would be great. Can't really describe what is so special about the chicken clay pot, it's such a simple looking dish, but the chicken is just perfectly cooked and the sauce is really perfect. Ugh, horrible description. Nonetheless, DELICIOUS! |

Re: Signature Dish
The veal parmagiana at Ralph's on 9th street of South Philly.
It's large, tasty, and less than $20. Featuring traditional southern Italian dishes, the place has been open over 100 years. They maintain an old school feel (still no credit cards accepted, though there is an ATM on the premises). Plus, it avoids the cliche of highlighting a cheesesteak joint in Philly. |
