Default Stat tracking at a b&m

I am wondering if anybody keeps track of the actual flop % or pfr % for players at a b&m. I'm sure that most people just pay attention to whats going on at the table and get a feel for their opponents' styles. However, I'm wondering if anyone keeps notes (physically or mentally) on all opponents actual stats?

You can't keep full PT stats on a B&M player, unless you are really really OCD.

Focus on the basics -
how do they open a pot normally (call/raise)
how well do they play position
how well do they defend blinds
When they miss the board, do they commonly give up on the flop, turn, river, or never?
other than PFR, what do their raises mean (hand ranges)

more advanced - tells
What's their normal behavior during a hand
What changes are you seeing now; and do they mean anything
What are they saying at the table (I had a guy last weekend say "I should have donked the flop"...that and watching about ten minutes of his play told me he was a 6 max NL multitabler from here - and I know how they play).
Sobriety - keep an eye on who is drinking, and how much.

None of this is terribly complicated...I built in one thing here, one there. I didn't try to absorb all this information at once starting out. Once you get enough time in B&M settings, it becomes second nature to track a table - as well as people across different sessions.
