is there such thing as coaching software where a coach could watch what is on a students screen?

This is probably at best vaguely-secure, but is currently the most secure method I am familiar with:

VNC over SSH Encrypted Tunnel

Far more secure is having your coach obvserve the tables you are playing while you read out your hole cards, or recording video for later review.

Any direct connection of this sort is a security risk, and should not be undertaken lightly. At least with a limited account connecting via SSH and VNC in view-only mode it should be kinda safe, but I am not entirely confident in the ability of Windows XP to properly limit the actions of any connected user.
