Can you learn anything only looking at 1000 hands at a time?

1000 hands wont give you a sample size large enough to detect any real leaks or such, it will however give you a good idea of your VPIP PFR and aggression level ( though these might be of also they will be in yuor general range)

You'd learn a lot about PokerTracker (which is well worth doing) but I doubt you'd learn much about your game.
