What\'s Cooking EDF? #3
Roasted chicken breast. Frozen chicken breast in the oven at 325 for about 40 minutes. After about 30 minutes put on some BBQ sauce, then melted a slice of cheddar cheese on top at the end. Sweet potato spears and red bell pepper. Tossed them in a little olive oil/salt/pepper/garlic powder. Roasted in oven with chicken. After the chicken was done cranked up the heat to 450 for another 10 minutes or so. |

Re: What\'s Cooking EDF? #3
Diablo, that meal is looking good...
Do you find that spending a little extra time 'plating' your creations can add to the enjoyment of your meal? Also, do you find any comparisons in bringing awareness to plating a meal with the zen art and practice of serving tea? or is a cigar just a cigar? in any case, enjoy. those sweet potato fries are looking tasty, any spices? |

Re: What\'s Cooking EDF? #3
A couple weekend dishes:
I'm not really sure what to call these. They were originally supposed to be kind of like spring rolls, but I decided to just fold over spring roll wrapper squares to make triangles. The filling: sauteed chopped leeks, chopped cabbage, minced garlic, diced onions, and diced carrots until it was all soft. Added this to a pound of ground turkey. Seasoned with salt and pepper. Filled this in spring roll wrappers (I'm pretty sure this is just phyllo) and sealed with a brush and egg wash. The dipping sauce is a soy sauce, wine vinegar, and sesame oil mixture. Reuben & Beet Salad I didn't make the beet salad. I did, however, make the reuben. Pastrami from the deli at Central Market, as thinly sliced as you can get it. Put this on rye bread with thousand island (actually, mine was a garlic & parmesan dressing that I added a bit of ketchup to. I don't like thousand island), provolone, and sauerkraut. Toasted on a griddle. Mini Turkey Burgers Sauteed onion and garlic until translucent. Added this to 2 lbs of turkey burger, one egg, some bread crumbs, chopped parsley, salt, pepper, a tablespoon of A-1 steak sauce, and a touch of cayenne. I portioned them out into about 1.5 ounce mini patties. I plated one up (because I'm a nerd with nothing better to do) by toasting some rye bread and then cutting out two rounds with the top of a shot glass. A tiny slice of swiss, a tiny piece of lettuce, and a bit of tomato to finish it off. Hershey's kiss for size reference. |

Re: What\'s Cooking EDF? #3
fluff,
Not greasy at all. Just bad flash photography. The sweet potatoes and peppers were tossed with a tablespoon of olive oil before being put in the oven. |
