i'd predict a 5 before a 7. check/raise just seems so obvious i dont know how somebody holding a 7 wouldn't do it (even if they're too dense to check/raise the flop).

I would fold the turn and not even think twice about it. This is either a 7, semi bluff with a pair, semi bluff with an ace, or air that is worse than your air. Doesn't look good.

That's why this is basically a bluff or a 7 almost always. This guy has like Q6 or something stupid a lot. People make this play because they are sick of their flop c/r semi bluffs never working so they try this.

I would probably call this turn not believing he has a 7 and fold a 6 or 8 river.
