Default what is the best blackjack book for advanced counting and strategy?

Stanford Wong's Professional Blackjack is, in my opinion, the Bible of Blackjack playing.

The Theory of Blackjack by Peter Griffin.
The book about the math behind counting written by a math phd. The effects of removal tables are what you need to design any count.

Blackjack Attack by Don Schlesinger
The book about what and when to bet. The chapter 10 tables are what you need to preserve your bankroll.

Wong's book covers Basic Strategy and all the variations of surrender with complete play charts and the numbers behind the charts. He also covers counting and true count using the high/low method. Bet sizes based on the true count are delved into as well.

In the back of the book, there is (if somewhat out of date) a complete listing of Casinos in Vegas and Reno, a list of how many BJ tables each casino has, and the rules for BJ at each casino. Like I mentioned, this is a little out of date now, but at the time of publication, it was cutting edge.

Peter Griffin, _Theory of Blackjack_.

It's not a recipe; it's a wide-ranging discussion of all the math underlying the game, so that a pro or competent amateur can devise an appropriate strategy for nearly any beatable situation.
