If you want simple, 'The Old Man and the Sea' by Hemmingway

If you want something about the human condition '1984'.

If you want horror and tension, 'It' by Stephen King.

If you want something a little more intellectual, 'The Gambler' by Dostoyevsky

not enough good things can be said about this book.
This is the author, Jospeh Heller responding to criticism that he hasnt produced another book on the scale of Catch 22

"When I read something saying I've not done anything as good as Catch-22 I'm tempted to reply, 'Who has?'"

I for one whole-heartedly agree.

If you're looking inspiration, then on any given day I might say...

"Atlas Shrugged," Rand
"The Great Gatsby," Fitzgerald
"The Hitchhiker's Trilogy," Adams
"Shogun," Clavell
"Price And Prejudice," Austen
"The Making of The Atomic Bomb," Rhodes
"The Lord Of The Rings," Tolkien

And I'd never say "best" about these, but I would certainly say "wow"...

"Of Mice And Men," Steinbeck
"Contact," Sagan
"1984," Orwell
"The Bourne Identity," Ludlum

Pretty much most of the novels that are in the canon or the pop culture canon are worth a look at. Stuff like Great Gatsby, Of Mice and Men, 1984...are all good reads.

Basically anything you were assigned in high school and didn't read is something you would probably appreciate now.
