Default PokerTracker Moving Processed files

When it asks me if I want to move these, to help speed it up, where should I move them too?

I really dont understand. Do I make a new folder for them, or do I just send them to recycle bin.

You might want them later, mostly if you have a problem with PT. If you don't think you'll ever want them, you can just delete them. Most people choose to save them (the feature is obv there for a reason). They don't take up a lot of space so I don't see why you would feel the need to delete them.
