You beat busted straight draws. That leaves busted flush draws and the possibility that he folds a pair on this board.

EDIT: You dont beat any busted straight draws. A8 will prolly fold to a bet tho

To fire a third I would need a read that a) he could fold say A3 or A5 and b) he isnt playing fd's aggressive. Most missed fd's on that board is with 2 oc's. I think its fairly likely that he would have played back with those on the flop.

Hmm I cant imagine him folding a pair here, but what about Ax no pair or possibly Kx?

I would play it the same. I would prefer if 7x hadn't hit, but he'll often donk that anyway. I think he has 8x often enough and folds it, and when it's otherwise close I like firing the 3rd barrel if it makes me look looney.

When I get you right, you say that he is only going to call to the river with 8x hands (besides made hands)? My reasoning behind the river bet was that he can perfectly be able to call the turn with two overs, especially with some Ax and Kx stuff. I figured he would be likely to fold them.
FWIW he called the river with A9o.

From his stats I'm guessing he doesn't call the turn with just 2 overs unless it's ace high. Whether he folds ace high on the river much is debatable.
