The key to scoring, at least in Superstar and I'll assume in lower levels, is to work the puck around in the zone and find open guys in the slot. Then, don't just fire the puck off the instant you get it, but hold the left trigger to square up to the net, look at where the goalie is, and then aim for the open side. You'll get knocked off the puck more, but your accuracy will improve dramatically, and coupled with odd man rushes/the occasional shot through traffic that the goalie doesn't see, should provide a decent amount of offense. It's also imperative to be play good defense, your AI teammates are pretty stupid so don't go chasing the puck around your zone, that'll just open the slot and you'll get one timed to death, but give the AI the bad angle shots and just protect the slot, clearing rebounds and breaking up passing attempts.
