I guess my next question to ask would be "Why do we care about additional variance?" I dont really want an answer to that as it wouldnt lead to anything constructive (if you think it would, please say something).

I think any player would love to get it all in with the best of it as often as possible, if you are not willing to do this, well, then that seems -EV. I dont see why you would want to put in 40% of the effective stack in preflop in any hand and fold, you are getting laid too good a price to call all in on the flop so we might as well get it in preflop. If this hand was 200-300 BB deep and the % effective stacks going in preflop was less than 20% then I could argue for just smooth calling his reraise (moreso in position) in order to build up a huge pot in position when you have more control, but for this 100x BB example, doesnt seem necessary.
