I think you ask a very good question. For instance, how do we tell the difference between a dog and a racoon? Sure, a raccoon has different facial features, but so do different dogs. Yet we instantly recognize even the most obscure breeds of dog as a dog.
Things like foxes, raccoons, marmasets, etc., all look pretty much the same (within their species). But dogs look very different from one and other.
