I've also tried the Camtasia demo software and it worked much more smoothly, although it took a while to render even a 10 minute video. CamStudio did not require the rendering time, so I wonder if that is what causes it to be choppy when recording?

Frame capture rate. Go into Options--Video Options and theres a sliding bar for Framerate. or you can uncheck the Auto-Adjust box and set it yourself in the Capture Frames Every: box
It will probably take longer to render, but see if that helps any
