Join her at the spa for a couples massage. Then she can spend the rest of the day there, and you can head out for some poker.
Do the helicopter ride AZK and Emporer mentioned earlier in the thread. I have not, but my brother and his wife did recently and they loved it.
Go to
Agent Provocateur and do some shopping with her. Or if it's more your style, get her a gift certificate and tell her to surprise you.
Rent a convertible. Get yourself a bottle of champagne, chocolate covered strawberries, and a bucket of ice. Drive to the roof of a parking garage with a good view of the Strip and enjoy the lights.
Renew your wedding vows. Do it fancy at the Venetian, or if you're into kitschy fun,
get Elvis involved.
