PokerTracker is a program that gives you stats about your online play (takes hand histories from online sites). Since you do not want to play online, it is a worthless suggestion.
Poker Academy and the Wilson softwares are the best available for practicing on your computer vs decent AI (artificial intelligence or robot) players.
