It is normally best to either set a time limit or a number of hands. If you happen to be at some really good tables stay as long as you are playing well, but make sure that you stay alert for signs that you are getting tired, bored, or otherwise burned out. My usual sign is that if I have made three crying calls in recent memory it's quitting time.

Take frequent breaks, especially if you multi-table. Playing for two hours and then taking 1/2 to one hour off is normally good.
